INGREDIENTS:
For Arbi Sabzi:
* Taro Root(अरबी) – 1/2 KG
* Mustard Oil(सरसों तेल) – 2 Tbsp
* Salt(नमक) – 1/4 Tsp
* Carom Seeds(अजवायन) – 1/2 Tsp
* Cumin Seeds(जीरा) – 1/2 Tsp
* Asafoetida(हींग) – 1/4 Tsp
* Turmeric Powder(हल्दी पाउडर) – 1/2 Tsp
* Salt(नमक) – As Per Taste
* Coriander Powder(धनिया पाउडर) – 1 Tsp
* Crushed Red Chilli Powder(कुटी हुई लाल मिर्च पाउडर) – 1/4 Tsp
* Kashmiri Red Chilli Powder(कश्मीरी लाल मिर्च पाउडर) – 1/2 Tsp
* Dried Mango Powder(अमचूर पाउडर) – 1/2 Tsp
* Coriander Leaves(धनिया पत्ती) – Some

For Banana Sabzi:
For Marinate:
* Raw Banana(कच्चा केला) – 4 Pieces
* Gram Flour(बेसन) – 2 Spoon
* Kashmiri Red Chilli Powder(कश्मीरी लाल मिर्च पाउडर) – 1 Tsp
* Crushed Red Chilli Powder(कुटी हुई लाल मिर्च पाउडर) – 1/4 Tsp
* Coriander Powder(धनिया पाउडर) – 1/2 Tsp
* Salt(नमक) – As Per Taste
* Turmeric Powder(हल्दी पाउडर) – 1/2 Tsp
* Oil(तेल) – For Frying

For Gravy:
* Tomato(टमाटर) – 3
* Ginger(अदरक) – 1-2 Inch
* Green Chilli(हरी मिर्च) – 3-4
* Asafoetida(हींग) – 1/4 Tsp
* Cumin Seeds(जीरा) – 1 Tsp
* Fennel Seeds(सौंफ) – 1 Tsp
* Gram Flour(बेसन) – 1 Tbsp
* Dried Fenugreek Leaves(कसूरी मेथी) – 1 Tbsp
* Crushed Red Chilli Powder(कुटी हुई लाल मिर्च पाउडर) – 1/2 Tsp
* Coriander Powder(धनिया पाउडर) – 1 Tsp
* Turmeric Powder(हल्दी पाउडर) – 1/2 Tsp
* Kashmiri Red Chilli Powder(कश्मीरी लाल मिर्च पाउडर) – 1/2 Tsp
* Black Pepper Powder(काली मिर्च पाउडर) – 1/4 Tsp
* Black Salt(काला नमक) – 1/4 Tsp
* Roasted Cumin Powder(भुना जीरा पाउडर) – 1/2 Tsp
* Salt(नमक) – As Per Taste
* Sugar(चीनी) – 1/2 Tsp
* Curd(दही) – 2 Spoon
* Coriander Leaves(धनिया पत्ती) – Some
* Hot Water(गर्म पानी) – 1/2 Cup

RECIPE:
For Arbi Ki Sabzi, take some Taro Root, wash them, peel them & cut them into slices. Keep the pan on the flame, put Mustard Oil, Salt, Carom Seeds, Cumin Seeds & Asafoetida/Hing Powder in it. Saute them & then put chopped Arbi in it. Then put Salt & Turmeric Powder & mix well. Then cover it in half & cook it on a slow flame to make it crispy. Then put Coriander Powder, Crushed Red Chilli, Kashmiri Red Chilli Powder & Dried Mango Powder. Mix well & then turn the flame off. Take it out in a bowl & garnish it with chopped Coriander Leaves.
For Banana Kofta, take some Raw Banana, peel & cut them into slices. Keep the pan for heating, put Water, Raw Banana Slices & Turmeric Powder & boil it for 3 to 4 minutes. Then drain out the Water & keep them on a filter to remove access water. Now take some Gram Flour, Kashmiri Red Chilli Powder, Crushed Red Chilli Powder, Coriander Powder, Salt & Turmeric Powder. Mix well & keep it by covering it. Then shallow fry the marinated Banana in medium-heated Oil until they get soft & crispy. Then take them out on a plate.
For Gravy, in the same pan, put some Oil, Asafoetida, coarsely ground Cumin Seeds & Fennel Seeds. Then put Gram Flour & Fenugreek Leaves & roast well till the Gram Flour is roasted Well. Then put Crushed Red Chilli, Coriander Powder, Turmeric Powder, Kashmiri Red Chilli Powder, Black Pepper Powder, Black Salt, Roasted Cumin Powder, ground Tomato, Ginger & Green Chilli paste, Salt & Sugar. Cover & cook till the gravy removes its Oil. Then put Whisked Curd & Water & mix well & cook for 2-3 minutes by covering it. At last, Coriander Leaves & Roasted Banana & Hot Water. Cook well & then turn the flame off. In this way, Veg Thali will get ready to serve.
