CLASSIC POTATO SALAD
Cooking time: 15-20 minutes
Prep time: 15 minutes
4 boiled and peeled potatoes, diced
2 tablespoons yoghurt
2-3 tablespoons mayonnaise
2 cloves garlics, mashed
1,5 tablespoon white wine vinegar
1 teaspoon grape molasses, any molasses works great
1 teaspoon red pepper
3 pinches salt
1 pinch of black pepper
2 tablespoons pickle juice
5 pickled gerkhins, diced
10-15 sprigs of dill, chopped
5-6 sprigs of spring onions, chopped
5-6 sprigs of parsley, chopped
* Make a horizontal scratch on potatoes, add enough water n the pressure cooker to cover the potatoes, add a pinch of salt and let it cook for 15-20 minutes until fork tender.
* To make the sauce, mix yogurt, mayonnaise, garlic, white wine vinegar, molasses, red pepper, salt, black pepper and pickle juice in a large bowl. You can replace vinegar and molasses with 2,5 tablespoons of balsamic vinegar.
* Add pickled gherkins, dill, green onions, parsley, and boiled potatoes in the sauce.
* Your potato salad is ready to enjoy with your loved ones!
